A Journey to El Salvador

After the incredible response to our last El Zol interview, we knew we had to return with something truly special. That's why we traveled back to El Salvador to source these exceptional beans—and what we found exceeded all our expectations.

These aren't just any coffee beans. They come from a select group of farmers in El Salvador's premier coffee-growing regions, and they've earned some of the highest ratings in the country's specialty coffee scene. But what makes them truly unique is the innovative honey processing method that infuses each bean with the natural sweetness of authentic Salvadoran honey.

The Honey Process: Nature's Perfect Enhancement

The honey process is a specialized coffee processing method where the coffee cherries are pulped, but some of the sticky, sweet mucilage (called "honey" because of its consistency and sweetness) is left on the beans during drying. Our Salvadoran partners have perfected this technique, using locally-sourced Salvadoran honey to enhance the natural sweetness.

The result? A coffee that showcases incredible complexity—the natural chocolate and caramel notes of Salvadoran beans are beautifully complemented by delicate honey sweetness and floral undertones. It's a flavor profile that's both familiar and entirely new.
